In the year 2000, Chang enrolled in the French Culinary Institute (FCI), currently known as the International Culinary Center, in New York City. He worked part-time at Mercer Kitchen in Manhattan and answered phones at Tom Colicchio’s Craft restaurant while he was training.

Chang founded his first restaurant, Momofuku Noodle Bar, in the East Village in 2004. Momofuku, according to Chang’s website, means “lucky peach,” but the restaurant also shares a name with Momofuku Ando, the originator of quick noodles.
